    Course: Salad
    Cuisine: Indian
    Ingredients Method Notes

    Ingredients

    • 1 bag coleslaw mix shredded cabbage and carrots, weighing 14–16 ounces
    • two 3-ounce packs of chicken-flavoured instant ramen noodles
    • 21 cups of slivered almonds
    • 21 cups of sunflower seeds or alternatively, sesame seeds
    • 3 –4 green onions scallions, cut into thin slices
    • Dressing
    • 21 cups of vegetable or canola oil
    • 31 cups of white vinegar or rice wine vinegar
    • 41 cups of granulated sugar
    • 2 tablespoons of soy sauce optional but enhances depth
    • 2 reserved packets of seasoning from the ramen noodles

    Method

    1. Prepare the Crunchy Topping (Toast):
    2. Crush the Noodles: Take the noodles out of their package. Snap the uncooked ramen noodles into small pieces that are suitable for consumption in one bite. Refrain from boiling them. Set aside the seasoning packets.
    3. Toast: Place the crushed ramen noodles, slivered almonds, and sunflower seeds evenly on a baking sheet with edges.
    4. Bake/Toast: Place in an oven preheated to 350°F (175°C) for approximately 8-10 minutes, stirring at the halfway point, until the noodles and nuts are golden brown and aromatic. As another option, use a dry frying pan to toast them on medium heat.
    5. Cool: Move the toasted mixture onto a plate and let it cool down entirely. This stops the slaw from wilting.
    6. Prepare the dressing:
    7. All the ingredients for the dressing—oil, vinegar, sugar, soy sauce (if used), and the contents of the two reserved ramen seasoning packets—should be mixed in a medium bowl or a jar with a tight-fitting lid.
    8. Vigorously whisk or shake until the sugar has dissolved and the dressing is thoroughly mixed.
    9. Put together the slaw:
    10. In a bowl of considerable size, mix together the coleslaw blend and the green onions cut into thin slices.
    11. Right before serving, incorporate the cooled, crunchy ramen and nut mixture into the bowl containing the slaw.
    12. Dress and Serve:
    13. Drizzle the slaw mixture with the dressing.
    14. To ensure that every ingredient is equally coated, gently toss everything.
    15. To achieve the crispiest texture, serve right away. You may prepare the salad up to an hour ahead of time, but the noodles will get softer the longer it sits.

    FAQs

Is it possible to prepare this Ramen Coleslaw in advance?

Yes, but do not mix everything together. Prepare the crunchy ramen/nut combination, the slaw mix, and the dressing. Keep them all separately in the refrigerated for up to a day in sealed containers. Just before serving, toss everything together.

Are the ramen noodles safe to consume raw?

Indeed. Instant ramen noodles are safe to consume straight from the packet since they are pre-steamed and dried/fried during production. Rehydrating them is not the aim here; rather, it is the gratifying crunch.

Can I use a different blend of cabbage and Cole slaw?

Of course! You may use Napa cabbage, broccoli slaw mix, or a combination of the two for added colour and nutrients.

How can I reduce the salt and make this dish healthier?

Skip the packet of seasoning: To add taste, add more garlic powder, powdered ginger, and a tiny bit of salt to the dressing.
Use Less Sugar and Oil: Cut the sugar to 2 tablespoons and the vegetable oil to 41cups, or use honey or maple syrup in its place.

    Final Notes

    • Mandarin Oranges: Drain and combine one can of mandarin orange segments with the cabbage mixture for a traditional touch. They provide a wonderful burst of flavour and colour.
    • Protein Power: You can make this salad a major course by adding 1 to 2 cups of shredded rotisserie chicken or cooked edamame, or it goes well with grilled chicken or shrimp.
    • First, freshness: After approximately an hour of tossing, the ramen noodles will start to soften. Serving it within 30 minutes of assembly is the best option. Keep the ramen and nuts apart from the prepared slaw if you want to have leftovers.
