This recipe gives you the best of both worlds if you enjoy tacos and egg rolls! The crispy, savoury tastes of a traditional egg roll are combined with the entertaining, portable format of a taco in Brandon's Egg Roll Tacos.
Picture a warm tortilla topped with crunchy carrots, seasoned ground pork (or chicken), and a zesty soy-garlic sauce. It is very tasty, easy to prepare, and ideal for game day get-togethers or weeknight dinners. A simple, inventive, and tasty blend of Mexican and Asian cuisine.

Ingredients
  

  • 1 lb 450 g ground pork (or chicken/turkey)
  • 2 cups shredded cabbage or coleslaw mix
  • 1 medium carrot grated
  • 3 cloves garlic minced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 teaspoon ginger paste optional
  • Salt and black pepper to taste
  • 2 green onions chopped
  • For the Sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey or brown sugar
  • ½ teaspoon chili flakes or sriracha optional
  • For Serving
  • 8 small flour tortillas or street taco shells
  • Sesame seeds optional, for garnish
  • Extra green onions for topping

Method
 

  1. Step 1: Cook the Filling
  2. Add the sesame oil to a large skillet that has been heated to medium heat.
  3. Add your preferred meat, such as ground pork, and heat until browned.
  4. Add the ginger and garlic and simmer for one minute until fragrant.
  5. Add the carrots, soy sauce, and shredded cabbage.
  6. Stir-fry the vegetables for 4 to 5 minutes, or until they are soft but still have some crunch.
  7. Add chopped green onions, salt, pepper, and rice vinegar. Stir thoroughly and reserve.
  8. Step 2: Prepare the Sauce
  9. Mix the rice vinegar, honey, soy sauce, and chilli flakes or Sriracha in a small bowl.
  10. Serve this sauce on the side or drizzle it over the filling.
  11. Step 3: Assemble the Tacos
  12. The tortillas can be warmed for a few seconds in a microwave or dry pan.
  13. Top each tortilla with a spoonful of the egg roll filling.
  14. Add sesame seeds and green onions as garnish.
  15. Serve right away with more Sriracha or dipping sauce.
