Packed with soft apple chunks, these muffins are moist and spicy. They are ideal for packing in a lunchbox, having as a snack, or having for a quick breakfast. For added texture and flavour, the recipe calls for a simple crumble topping.

Ingredients
  

  • All-Purpose Flour: 2 cups
  • Granulated Sugar: 1/2 cup
  • Packed Light Brown Sugar: 1/2 cup
  • Baking Powder: 2 teaspoons
  • Ground Cinnamon: 1 teaspoon
  • Ground Nutmeg: 1/4 teaspoon
  • Salt: 1/2 teaspoon
  • Large Eggs: 2 lightly beaten
  • Milk: 1/2 cup
  • Unsalted Butter: 1/2 cup 1 stick, melted and cooled
  • Vanilla Extract: 1 teaspoon
  • Apples: 1 1/2 cups peeled, cored, and finely diced (use a firm, crisp variety like Honeycrisp, Granny Smith, or Fuji)
  • For the Crumble Topping Optional
  • All-Purpose Flour: 1/2 cup
  • Packed Light Brown Sugar: 1/4 cup
  • Ground Cinnamon: 1/4 teaspoon
  • Unsalted Butter: 3 tablespoons cold and cubed

Method
 

  1. Step 1: Prepare the Oven and Muffin Tin
  2. Set the oven temperature to 375°F, or 190°C. Place paper liners inside a 12-cup muffin tray.
  3. Step 2: Make the Crumble Topping (if using)
  4. Put the cinnamon, brown sugar, and flour in a small bowl. Add the chilled butter and chop with your fingertips or a pastry cutter until coarse, sandy crumbs form. Put aside.
  5. Step 3: Combine Dry Ingredients
  6. Mix the flour, baking powder, nutmeg, cinnamon, baking powder, and both sugars in a big bowl.
  7. Step 4: Combine Wet Ingredients
  8. Whisk the milk, melted butter, vanilla extract, and softly beaten eggs in a different medium dish.
  9. Step 5: Mix Wet and Dry Ingredients
  10. Mix the dry ingredients with the wet ones. Using a spatula, stir just until blended. Avoid overmixing; this will result in a thick, lumpy batter that is ideal for soft muffins.
  11. Step 6: Fold in Apples
  12. Add the finely chopped apples to the batter and fold gently.
  13. Step 7: Fill the Muffin Tin
  14. Evenly distribute the batter among the 12 muffin tins. The cups are going to be filled.
  15. Step 8: Add the Topping
  16. Top each muffin with a large amount of crumble topping, if using.
  17. Step 9: Bake
  18. A toothpick put into the middle of a muffin should come out clean after 20 to 25 minutes of baking, or until the tops are golden brown.
  19. Step 10: Cool
  20. After a few minutes of cooling in the muffin tray, move the muffins to a wire rack to finish cooling.
