A traditional, creamy, and high-protein dish that works well at any time of day is the gammon and egg salad. Tossed in a creamy, tart mayonnaise sauce, it blends the richness of cooked eggs with the savoury delight of chopped gammon.
This easy recipe is always a hit, whether it is served as a side dish at a party, in a sandwich, or on a bed of fresh lettuce. It takes less than 30 minutes to prepare and is a terrific way to use up leftover gammon and eggs. It is perfect for brunch parties, picnics, and fast lunches.

Ingredients
  

  • 6 large eggs
  • 1 cup cooked ham diced (about 150 g)
  • ½ cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice or white vinegar
  • 2 tablespoons chopped green onions or chives
  • ¼ cup finely diced celery
  • ¼ cup finely diced red bell pepper optional for color
  • Salt and black pepper to taste
  • Lettuce leaves or bread for serving

Method
 

  1. Step 1: Boil the Eggs
  2. Put the eggs in a pot and pour cold water over them.
  3. After bringing to a boil, cover and turn off the heat.
  4. After 10 to 12 minutes of sitting, run cold water over it to cool it down.
  5. Cut the eggs into tiny cubes after peeling them.
  6. Step 2: Prepare the Salad Mix
  7. Put the chopped ham, green onions, red bell pepper, and celery in a big bowl.
  8. To the bowl, add the diced boiled eggs.
  9. Step 3: Make the Dressing
  10. Mix the mayonnaise, mustard, lemon juice, salt, and pepper in a small bowl.
  11. Cover the gammon and egg mixture with the dressing.
  12. Step 4: Mix and Serve
  13. Fold everything together gently until it is coated evenly.
  14. For optimal flavour, chill for 15 to 30 minutes before serving.
  15. Serve with crackers, in a sandwich, or on top of lettuce leaves.
