A delightful take on the classic Indian yoghurt-based beverage, Serena's Strawberry Lassi skilfully blends the sweetness of ripe strawberries with the tang of fresh yoghurt. This fruity, creamy beverage is a great option for breakfast, a post-workout refresher, or even a light dessert because it is full of nutrients. Since ancient times, lassi has been a mainstay in Indian homes due to its cooling and digestive qualities.

Ingredients
  

  • Fresh strawberries – 1 cup hulled and chopped
  • Plain yogurt curd—1 cup (thick and chilled)
  • Cold milk – ½ cup adjust for desired consistency
  • Honey or sugar – 2 tablespoons adjust to taste
  • Ice cubes – 4 to 5 cubes
  • A pinch of cardamom powder optional, for aroma
  • Rose water – ½ teaspoon optional, for a floral note
  • Mint leaves – for garnish
  • Fresh strawberry slices – for garnish

Method
 

  1. First Step: Get the strawberries ready.
  2. Wash the strawberries well under running water to start. Cut them in half or quarters after removing the green stalks, also known as hulls. Sprinkle a teaspoon of sugar on top of your slightly tart strawberries and allow them to sit for five to ten minutes so that their natural juices can be released. This will add sweetness and create a beautiful blend of flavor.
  3. Step 2: Mix the ingredients together.
  4. Put the cut strawberries, cool yogurt, honey (or sugar), cold milk, and a couple of ice cubes in a blender. Add rose water or cardamom powder for a hint of aromatic flavor. Blend until the mixture is creamy and smooth. Make sure no strawberry bits remain—the texture should be silky and well combined.

  5. Step 3: Verify sweetness and consistency
  6. Taste your lassi after opening the lid. You can combine again after adding a bit colder milk if it is too thick. Pulse again after adding a little more sugar or honey if it is not sweet enough.
  7. Step 4: Allow to cool and serve Fill tall glasses with the lassi.
  8. For a refreshing touch, place a few mint leaves on top of each glass or a strawberry slice on the rim. Before pouring the lassi, pour some honey or strawberry puree inside the glass for a sophisticated presentation that gives it a restaurant-style appearance.
