Ingredients
  

  • 12 –15 sweet mini peppers
  • 1 cup cream cheese softened
  • ½ cup mozzarella or cheddar cheese shredded
  • 2 tbsp chopped green onions
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning or mixed herbs
  • Salt and pepper to taste
  • Optional: crushed red chili flakes for spice
  • Fresh parsley or cilantro for garnish

Method
 

  1. Preheat Oven: Preheat the oven to 375°F, or 190°C.
  2. Prepare Peppers: Get the peppers ready: Mini peppers should be cleaned, cut lengthwise, and seeded.
  3. Make the Filling: Prepare the filling. Combine the cream cheese, shredded cheese, herbs, garlic powder, green onions, salt, and pepper in a bowl.

  4. Fill the peppers: Using a spoon, pour the creamy mixture into each side of the pepper.
  5. Bake: Put the filled peppers on a baking tray that has been prepared, brush them with a little olive oil, and bake them for 12 to 15 minutes, or until the cheese is bubbling and melted.
  6. Serve: Top with chilli flakes or fresh parsley and serve hot.
