    • 12 –15 sweet mini peppers halved and deseeded
    • 1 cup mozzarella cheese shredded or small cubes
    • 1 tbsp olive oil
    • 1 tsp Italian seasoning or oregano + basil mix
    • ½ tsp garlic powder
    • Salt and black pepper to taste
    • Optional: red chili flakes for a little heat
    • Fresh parsley or basil for garnish

    Method
     

    1. Oven Prep: Preheat the oven to 375°F (190°C).
    2. Get the peppers ready: Before removing the seeds, wash the tiny peppers and cut them in half lengthwise.
    3. Season: the pepper halves by drizzling them with olive oil and adding salt, pepper, and garlic powder.
    4. Stuff: Add mozzarella cheese to the inside of each pepper half. On top, scatter herbs or Italian seasoning.
    5. Bake: Bake the stuffed peppers by placing them on a parchment paper-lined baking pan. The cheese should melt and turn a light golden colour after 10 to 12 minutes of baking.
    6. Garnish & Serve: Serve warm after taking it out of the oven and garnishing it with chilli flakes or fresh parsley.
